What would you like to know? I am fun, but crazy. I have a most perfect husband, and 2 cats named Samson and Delilah. We are presently working on adopting a little girl from China and have a separate blog for that. I am a Christian and am working on a better relationship with him. I live in the Atlanta area and love sharing stories with people. I am also a pediatric nurse and I love it! I love to talk and meet new people and I love Disney Cruising

I have gotten to know some really cool people through this whole blogging thing. I just thought you would like to know!

I am working today and tomorrow and this weekend and then I have 4 days off in a row next weekend. I am hoping to get drs appts out of the way and really want to get the whole house clean plus visit some friends.

what about you? whats going on..

oh yeah, since I am really trying to diet, tell me your favorite diet recipes or snack foods or anything that may help me in this journey.

So what kind of diet? Low-fat? Low-carb? Whatever it is, I'm sure I've done it and have recipes to go along with it. :-) I'll be glad to share.

Load up on fresh vegetables and fruits! If you have to use oil for cooking, make it olive oil. I LOVE broiled salmon or tilapia with some lemon juice and your favorite spices or even some fat free Italian dressing. Lean Cuisine and Michelina's Lean Gourmet make some really good frozen meals -- the Lean Cuisine salmon with basil is delicious! Try to get in at least two servings of low fat or fat-free dairy every day, like skim milk or fat-free yogurt. A small handful of almonds or walnuts makes a good snack. Healthy Choice has really good fudge bars. Switch from using eggs in recipes or eating them to Egg Beaters. Scrambled they taste as yummy as real eggs, and they work great in recipes.

Here's a good recipe for muffins:

1 box of cake mix (I use yellow)
1 small can pumpkin
1/2 cup water
2 egg whites (use Egg Beaters instead)
Mix all ingredients, pour into muffin tins, sprayed with Pam. Bake at 350 for 20 minutes.

I make a batch and then freeze them, only taking one out when I need a snack. 30 secs in the microwave and it's ready.

I have been lucky enough to never have had to diet, so I am honestly the last person in the world that could answer this.. Uh.. maybe, something nofat nocarb nosodium - usually means no taste if ya ask me..

Things as close to being fresh as possible, avoid box mixes.

Did you know if you stop drinking just one can of sweetened soda everyday you can lose 13 lbs in a year?

Throw away everything in your kitchen that will tempt you. Don't buy it again.

Well, I lost 50 pounds last year and did it all on Lean Cuisines and cutting out all sugar from coffee, using Equal or Sweet and Low. But I allowed my self one day a week, Saturday, always the same day of the week to treat myself to something. It never messed up the diet and I did not feel deprived that way.

Some good snacks are the light butter popcorn, pretzels, cheddar flavor rice cakes, and light or fat free ice-cream and of course, light hot fudge!!!

Quaker Quakes are great! We like the 100-calorie bags of microwave popcorn. Vanilla wafers (you can have a whole handful for 100 calories). Sugar-free Jello rocks! Fruit, fruit, and more fruit. My husband and I both eat 1/4 cup of almonds per day: great health benefits, and you'd be surprised how long you can make such a small amount of almonds last, nibbling on them.

One more thing, are you familiar with sparkpeople.com? Lots of free helps there, and you can keep track of everything you eat, if you so choose.

Organic thompson raisins. As big as a cockroach, but ten times yummier -- and all that fiber's a tummy filler, too.

ooh i found one i've been using recently, chicken salad:

-canned chicken (or leftover chicken breast)
-walnuts
-green apples, chopped
-lowfat mayo

mix it all together, put on whole grain bread or wrap (i used sun-dried tomato wrap yesterday) and you've got your lowfat and your protein all in one. i love this!

I gave up soda both diet and regular and have to say I feel so much less bloated.

Hey Amy - Just thought I'd pass this site on to you as it really helped me. www.sparkpeople.com I thought it was a REALLY great site - lots of recipes, message boards etc., but what I loved (it worked for me, may not work for everyone) is that it sets up an entire plan for you - ie: caloric intake, exercise, water intake - and then keeps track of it for you.

Anyway, I always tell people about it because I loved it so much. I need to get back there as well! Check it out and see what you think :-)

I buy a bag of frozen shrimp at Costco and a bottle of cocktail sauce. Whenever I need a snack, thaw a cup of shrimp in water for five minutes, drain and I'm good.

I love eating bell peppers - green, yellow, orange, red - what ever I have on hand. When I want something sweet, I chomp down on a Special K breakfast bar. They're lower in fat and not too high in calories.

We tried the South Beach diet and while the wife loved it I hated it. But, I did love the Ricotta desserts!! Low fat yet just enough sweetness. I might have a recipe lying around if you want it
