Amy . . .

What would you like to know? I am fun, but crazy. I have a most perfect husband, and 2 cats named Samson and Delilah. We are presently working on adopting a little girl from China and have a separate blog for that. I am a Christian and am working on a better relationship with him. I live in the Atlanta area and love sharing stories with people. I am also a pediatric nurse and I love it! I love to talk and meet new people and I love Disney Cruising

Lucy the hound dog and things

I will just let you that if you shut the door on a basset hounds nose (or beak) they will survive. i have been letting Lucy have free roam of the house a couple times a day and after I pretty much tripped over the last stair while letting the kitty litter out, Lucy tried to escape. Please don't try to picture it as it wasn't even funny. Poor everyone..

Anyway, its time for your help. I need ideas for dinner tomorrow night. Just Michael and I. Come on blogging friends, most of you are domestic goddesses..I need your expertise. I need something that you really cant mess up. I have 12 cookbooks. I cant find anything..Help!!!

Hmm, I am by no means a domestic goddess, so I'm not sure how helpful I can be. Do you like baked ziti? I have a recipe for that, and it is delicious! It makes a lot, though, so you can have leftovers as well.

Michael makes his own wonderful ziti, so I think I would be breaking the rules if I did that

How about tostadas, what can be simpler and tastier than that.

If you like chicken, you could try cheesy chicken or buttermilk chicken (and even cheat by using frozen buttermilk biscuits) they are both really easy. If you do a search for them on my blog, I have them posted. Or you could do a pot roast or pork roast...those are both yummy and filling! Let me know if you need help, I have LOADS of cookbooks;)

I usually check Allrecipes.com or the Kraft Food and Family websites for recipes. (I don't know the Kraft website address off the top of my head ~ but I did post it on my blog a few days ago)

The Kraft recipes are SUPER easy and have alway turned out well for me. Plus, anything in a slow cooker is hard to mess up. :)

I have two great recipes. One is chicken poppyseed casserole, and the other is a beef dip in au jois, not anywhere near as complicated as it sounds.
Let me know if you want to try one!

The food doesn't really matter-it is all in the presentation. Be sure to set the table, light some candles, and dim the lights. No TV- not even in the background! Enjoy just being together :)

Sometimes when I want something fast and easy I make Beef Stroganoff... I use the Hormel Beef Tips and Gravy (already preparded, just heat/serve)...it usually has the receipe on the package. It just uses sour cream, mushrooms and green onion. Serve over wide egg noodles. Serve with a salad...Yummy! Email me if you want the full receipe.

Grilled pork chops with grilled veggies is always a favorite here!

I have tons of recipes, but not sure which to suggest for what you guys like. Hmmm... How about something like a Salsa chicken dish over rice or a crockpot meal like Veggie Bean Chili with some Cornbread or maybe try Peppersteak. If any sound good to you let me know and I will send the recipes your way!

I forget the name for it - but it's like Mexican style lasagna. Basically the ingredients of enchiladas (I can supply a recipe, very very yummy!) done in a lasagna layout. And no, you can't screw it up because all my recipes are done the Italian way: a pinch of this, a dash of that then set the oven around... ;-0
